No Guilt Pumpkin Protein Bites Recipe
Ingredients:
- 1 packet Vanilla-flavored Undersun Meal Shake
- 2 cups old fashioned oats
- ½ cup coconut shavings
- ⅓ cup sugar
- 1 tsp pumpkin spice
- ⅛ Tbsp peanut butter powder
- ⅓ cup unsweetened applesauce
- ½ cranberries
- 4 egg whites (½ cup)
- 2 caps vanilla extract
- ½ can pumpkin puree
Directions:
Put all dry ingredients into a large mixing bowl (Undersun Meal Shake, oats, coconut shavings, sugar, pumpkin spice, peanut butter powder). Then, add wet ingredients and mix all together in the bowl. Grease a cookie sheet (or aluminum foil on top of a cookie sheet). Make individual balls out of the ingredient mixture and space them an inch or so apart. You should end up with around 10 to 12 balls. Place cookie sheet on the center rack of the oven (preheated to 350 degrees). Bake for 10 to 15 minutes, depending on desired hardness and moistness. After removing from the oven, let cool for a few minutes.
